
Milam & Greene Whiskey and Azamara Cruises have announced a partnership to age a bourbon barrel aboard the Azamara Quest during the cruise line’s 188-night 2027 World Cruise. The collaboration, dubbed Bourbon Quest, will place one of four barrels at sea beginning March 26, 2026, while the remaining three continue aging on land in Texas, Kentucky, and Florida.
The experiment is designed to measure how maritime climate affects bourbon maturation, with location as the only variable across all four barrels. The barrels were originally filled in Kentucky on November 11, 2019, placing them in the final stages of a six-plus-year aging journey. Marlene Holmes, Master Distiller of Milam & Greene, is the mastermind behind the project. Results will be revealed in 16 months once the sea-aged barrel returns from its voyage across 37 countries.
“Being on a ship exposed to the open air, we expect that the higher humidity levels would work to slow evaporation over the same time period in a dryer climate,” said Rikk Munroe, Director of Distillery Operations at Milam & Greene. “As for temperature, the fluctuations over time between higher and lower temperatures will drive the whiskey into and out of the wood resulting in more complex flavors in the finished whiskey. We are excited to see the effects the ocean climate will have on this barrel as a follow-on to our earlier maturation experiments.”
“We expect the dynamic aging environment on board to add a deeper oak character to the whiskey,” Munroe added. “The constant motion of the vessel, over the course of the voyage, should agitate the liquid against the inside of the barrel driving more oak influence on the whiskey. We would expect to see more intense notes of vanilla, caramel, and spice along with a darker color versus barrels aged in a static environment.”
The four whiskeys from the experiment have been named The Seafarer (aged at sea), The Wayfarer (aged in Kentucky), The Pathfinder (aged in Texas), and The Pioneer (aged in Florida).
Approximately 400 units of the sea-aged bourbon will be available exclusively to Azamara guests. Throughout the cruise, the barrel will be showcased in a specially designed onboard display.

Guests aboard the cruise will also have access to curated experiences, including exclusive whiskey tastings, storytelling sessions about the aging process, and culinary pairings. The final product will debut during the closing leg of the 2027 World Cruise after crossing the Atlantic and Pacific Oceans twice.
