
The Singleton is pushing the boundaries of whisky making with its latest release, unveiling a collection of three 42-year-old single malts from Glen Ord Distillery, inspired by the world of fine patisserie. The Gourmand Collection represents the longest secondary maturation in the brand’s history.
Each expression in the limited collection is designed to capture the essence of a specific dessert, crafted by renowned Master Pâtissier Nicolas Rouzaud. “In pursuit of exceptional indulgence, this collection pushes the boundaries of whisky maturation, much like Nicolas’ approach to creating layered, flavourful pâtisserie,” said Master of Malts Dr. Craig Wilson Together, they create a harmonious tasting adventure that showcases the artistry behind both crafts.”
The Singleton Gourmand Collection
The Singleton Gourmand Collection comprises three 42 year old single malt scotch whiskies. The first, ‘Notes of Fig & Chocolate Ganache’, delivers characters of melted chocolate, cloves, spices, and rich vanilla with an ABV of 46.8%. ‘Notes of Caramelised Crème Brûlée’ at 45.3% ABV balances rich and sweet notes of baked vanilla custard. The third expression, ‘”Notes of Black Cherry Gâteau,’ bottled at 45.5% ABV, embodies the classic dessert with flavors of ripened black cherries, chocolat,e and black pepper.
Patisserie Collaboration
To complement the whisky release, The Singleton has partnered with Master Pâtissier Nicolas Rouzaud, known for his work at The Connaught in London. Rouzaud has created three bespoke cakes designed specifically to pair with each whisky in the collection.
“The art of a Chef Pâtissier is rooted in creativity, passion, and the pursuit of unbounded flavour—qualities that are also central to the whisky-maker’s craft,” said Rouzaud. “The Singleton’s process, flavours and commitment to slow craft and precision inspired the creation of these cakes and I’m honoured to present these alongside The Singleton Gourmand whiskies to craft a truly singular moment of indulgence.”

For the Fig & Chocolate Ganache expression, Rouzaud crafted a cake where “silky mousse, airy sponge, and a crisp base create a dynamic palate experience.” The Caramelised Crème Brûlée companion combines puff pastry, flan, and caramel cream with rich vanilla as the cornerstone ingredient. His Black Cherry Gâteau creation showcases Griottines cherries blended with rich chocolate, inspired by the classic Black Forest Gâteau.
Limited Availability and Tasting Experiences
Whisky enthusiasts can experience The Singleton Gourmand Collection with pastry pairings at Justerini & Brooks in London’s Burlington Arcade from April 28 to May 5, 2025. These exclusive tastings, priced at £275 per person, will last approximately two hours between 4-6pm daily and can be booked via justerinis.com and Eventbrite.
For those visiting Scotland, The Home of The Singleton at Glen Ord Distillery will offer a unique tasting experience from May 2025 priced at £45 per person, featuring a custom three-layer cake designed by Rouzaud to pair with The Singleton’s 12 Year Old, 18 Year Old, and 21 Year Old expressions.
The Singleton Gourmand Collection is limited to 136 sets globally, priced at £8,800 ($9,000) for three 50cl bottles. The U.S. price excludes duty and taxes, while the U.K. price includes them. More information and bookings are available at thesingleton.com.
